Get Your Kids to Eat Leafy Greens Recipe, Inspired by Dr. Seuss

I do not like green eggs and ham!
I do not like them, Sam-I -Am
You do not like them.
So you say.
Try them! Try them!
And you may.
Try them and you may, I say.
This rule of Dr. Seuss is one I highly honor as a parent around the dinner table. Followed by, "it's ok if you don't like it, but I would like you to try it."
And you know what? There are very few healthy foods my children will not eat and I am quite proud of that!
Leafy greens is one of those tough vegetables, but if your kids eat eggs and cheese, then they will love my green egg and cheese wrap recipe.

Green Egg & Cheese Wraps
Servings 4; Preparation/Cooking Time: 15 minutes
Ingredients
- Trader Joe's Handmade Tortilla Wraps (4)
- Eggs (8)
- Fresh Spinach (1 cup)
- Trader Joe's - Sliced Havarti or Colby Jack Cheese (2 slices)
Directions
- Heat non-stick pan or spray with cooking oil over medium heat
- Break open 8 eggs into blender or magic bullet, add spinach and blend.
- Pour egg and spinach mixture onto heated pan
- Cook over medium-low heat until eggs are fully cooked, stirring often
- Once eggs are cooked, remove pan from heat
- Break up cheese slices and place over cooked, scrambled eggs
- Place lid over pan, until cheese is melted
- Place ¼ of the scrambled egg, spinach and cheese onto a tortilla, fold in ends and roll like a burrito

Recipe Variations
- You don't have to make a sandwich, green eggs are just as good scrambled, with or without cheese, and some kids may like a bit of ketchup on the side.
- Give the recipe a fun name that is relevant to an interest of your child, this may help with getting picky kids to try it. Some ideas could be "Green Monster Breakfast", "Dinosaur Eggs", "St. Patrick's Day Scramble". If you come up with others, let me know!
- Dress it up for grown-up, add mushrooms and onions with jarlsberg cheese, or black beans and tomatoes with Greek yogurt or sour cream spread, or even ham and Swiss and Enjoy!
- Serve with home fries or tator tots for a complete breakfast.
