Twice baked potatoes mashed with veggies and topped with pizza sauce & melted cheese.

This inexpensive dinner requires little prep time and can be easily customized for those with dietary restrictions or picky eaters.

Ingredients

Serves 4, costs approx $7, dinner in an hour (majority of time is oven baking potatoes)

  • 6 medium Russet baking potatoes
  • 1/2 cup Trader Joe's frozen chopped spinach
  • 1/2 cup Trader Joe's frozen broccoli florets
  • 1-2 yellow onions
  • 1 tablespoon Earth balance
  • 1/2 cup Greek yogurt
  • Trader Joe's pizza sauce
  • Shredded mozzarella or other favorite cheese

Directions

  1. Preheat oven to 450°
  2. Bake potatoes for 45-60 min or until you can easily stick a fork in them
  3. Slice, sauté & carmelize onions with a sprinkle of sugar (place lid on pan until onions are cooked)
  4. Lightly steam 1/2 cup broccoli florets & 1/2 cup spinach, drain well
  5. Let potatoes cool until they are not too hot to handle
  6. Slice in half the long way
  7. Scoop out inside of potato with spoon into large bowl
  8. Place potato skins back on cookie sheet
  9. In bowl mix in cooked spinach, broccoli & carmelized onions
  10. Add 1 tablespoon earth balance & 1/2 cup Greek yogurt
  11. Mix all ingredients
  12. Scoop mashed potatoes & veggies back into potato skins
  13. Top with 1-2 tablespoons pizza sauce & shredded cheese
  14. Place back in hot oven to melt cheese until lightly browned
  15. Enjoy!

What a fun idea! They're naturally gluten free...and I bet we could adapt a few to match each persons allergy set...hmmm. Thanks for the recipe!
